Rijker, as a Kung Fu fighter, has been on the cover of Inside Kung Fu magazine. As a professional boxer, she has been able to win the WIBF world Welterweight title, and she has beaten name fighters such as Marcela Acuna , knocked out in five rounds. Many of women's boxing's fans have been claiming for a meeting between her and Christy Martin for years. However, negotiations have not led to such a fight happening. In 2000, she and Martin met at a press conference to announce a Martin fight, and they brawled during the conference.

After winning her first 14 fights, but failing to secure a match with Martin, Rijker stepped away from the sport in 1999 to pursue a career in Hollywood. However, she returned to the ring in February of 2002, and then defeated standout Jane Couch on June 21, 2003 for her 16th win without a loss.
