Kraut juice is a beverage made of the liquid in which sauerkraut is cured. An apparently American innovation, it is widely available in those parts of the U.S. Northeast and Midwest where German immigrants settled en masse, such as in central and western Pennsylvania. It occasionally turns up elsewehere. It is to be drunk cold, in a glass, perhaps with a celery stick protruding. Apparently, most of those not introduced at an early age to at least the concept of kraut juice, if not to the actual product, are incapable of regarding it as a palatable substance.
Others find it quite refreshing, and valuable as a cocktail mixer.
