Hanpen (半片) is a white, triabgular shaped surimi product. It has a soft taste. It is believed to have been invented during Edo period by a cook, Hanpei (半平)of Suruga and his name is used for the food. Another theory suggests that because it is a triangle shaped and appear to have been cut in half from a square, it is a half (半) piece (片). It can be eaten as a ingredient in a miso soup, oden, or soup. It can also be fried and broiled.In Shizuoka perfecture, whole sardines are used and resulting products come out with bluish gray color and this is called Kuro Hanpen, lit. black hanpen.
